Pergamena di pane classico Cherchi, also known as parchment bread, is a traditional Sardinian flatbread. Wide, thin flatbreads that break into crisp shards. Ideal for dipping or topping with fresh ricotta.
A traditional way to enjoy Pergamena di pane is to make pane guttiau, Sardinian bruschetta. Season large pieces of the bread with extra virgin olive oil, salt and garlic and place in a hot oven for a few minutes.
