NV Nova Vita 'Firebird' Adelaide Hills Sparkling

The Koznad family purchased their first Adelaide Hills vineyard in 1999. Years later they expanded and purchased another. Biological systems are well established in the two vineyards for pest control and disease and biodynamic practices are being rolled out on targeted blocks. They employ minimal handling in the winery and add minimal sulphur.
Their sparkling is a blend of Chardonnay and Pinot Noir, with some time on lees, adding some texture. Apple and pear aromas lead to a fruit driven palate, with some biscuity characters.
