There are very few semi-hard, natural-rinded goat’s milk cheeses being made in Australia, and La Dame is one of our favourites. It has delicate, complex flavours without any of the ‘goatiness’often associated with the style. The texture ranges from dense and creamy to slightly flakey, depending on the age, and the flavour combines nutty notes with a caramel finish.
