Save our Souls is a joint venture between William Downie and Jason Searle. They met whilst working at Bass Philip. Their philosophy is keep it simple, with minimal intervention and sulphur added. They’ve pushed the envelope on this wine, with extended time on skins, making a textural and luscious wine. Look out for all the fresh herbs, white peach and earthy characters.
